You can find this delicious and simple dish at many of the fiestas and festivals throughout New Mexico. Great for summer barbeques!
To create this tasty treat at home you need :
2 corn on the cob
1 tsp of salt
A pinch of black salt
1/2 tsp of red chilli powder
1 lemon cut in half
Mix salt, black salt and chilli powder in a small bowl. Fold back the husk (to use as a handle to eat with) and remove the silk from the corn. On a gas burner turn the heat to high or use a barbeque grill if you want to roast several at a time. Roast the corn turning constantly till you see dark brown-black color on the kernels. Turn the heat off. Dip the lemon in the salt mixture and rub it on the roasted corn.
