A new study shows that investment is beneficial for the environment and for the bottom line. Liz Goodwin of the World Resources Institute has co-authored a study that shows every $1 investment in food waste reduction results in $7 of savings for restaurants. These finding hone in on the first of the "Three Rs", Reduce. Food waste has quietly proven to be a critical issue and a huge opportunity to reduce our waste, emissions, and improve the environment. One study found that restaraunts in the US alone throw away 22 to 33 billion pounds of food every year.

Clearly there is room for improvement. Check out the story from Fast Company here to learn more. While you're at it, check out the New Mexico Recycling Coalition's handy guide to managing food waste for New Mexico Restaurants.
