New Mexico, with its unique cultural and gastronomic history of Spanish Conquistadors and Native Americans, is home of the best Mexican and Southwestern foods in the world and is said is what drives all the creativity in our arts. Delicious dishes such as Green Chile Stew, Carne Adovada, Blue Corn Posole, Sopaipillas, Chicos, Enchiladas, and Christmas Salsa have slowly been developed in the mountain valleys of northern New Mexico over the past 375 years through a subtle blending of the tastes and native foods of the long isolated Spanish and the original Indian inhabitants. Established in 1981 as a small family-owned firm, Los Chileros is dedicated to providing the ingredients for gourmet southwestern cuisine.
