Tacos, New Mexico Style
Formerly culinary editor for New Mexico Magazine, Cheryl Alters Jamison has won four James Beard Foundation awards and written numerous cookbooks. She gave up her editorship when she got too busy wandering the Americas in search of stuff like great tacos—and documents New Mexican versions in this issue. “Tacos are pretty much the perfect food—carb, protein, salad, and spice, with all the flavors melding in each bite.” Jamison also hosts a radio show and serves on the board of Cooking with Kids, a Santa Fe nonprofit. Having lived in the town formerly known as Hot Springs, David Pike was excited to dive into this report on Truth or Consequences. “It was a chance to go home again and see things from a new point of view,” he says. The journey stirred up many fond memories. But it was the variety of opportunities that struck him the most. “Where else can you dance to old- time fiddling music one day and visit the space-age Spaceport the next?” Pike won the Writer of the Year Award last year from the International Regional Magazines Association. His latest book is Detour New Mexico (History Press, 2017).

Photographer Jay Hemphill met up with David Pike in Truth or Consequences to scout images for their story—and he came back with a mother lode. “T or C was a cool little town to roam around and chat up locals—art, great food, and hot springs. What more could you ask for? My wife and I are planning our anniversary trip there.” Hemphill began his love affair with New Mexico as a child on family trips to the Taos area for skiing. In 1999 he moved from DeSoto, Kansas, to Silver City to finish a degree in photography at Western New Mexico University. He still makes his home there.
